This 15-year-old Mortlach is finished in a specially selected Tonneau (Cognac) cask, unlocking new depths of richness and complexity. Expect layered fruit, warm spice, and Mortlach’s signature meaty character.
Nose
Sweet barbecue ribs and barley sugar, subtle charcoal and gravy
Palate
Intensely sweet, roasted duck in dark cherry sauce.
Finish
Smooth, earthy and balanced, leaving a powerful lasting impression.

I’ve generally struggled with Cognac finishes, as they often push sweetness or perfume ahead of structure, but this is a really well-judged exception. The integration is excellent. The Cognac influence brings warmth and spice without overwhelming the distillate, and the Mortlach character stays clearly in charge throughout.
What impressed me most is how composed the whisky is at 55.6%. The ABV adds texture and structure rather than heat, and the spice feels woven into the palate rather than sitting on top of it. It drinks confidently and maturely, with no sense of the cask dominating or shouting.
This is a great example of finishing done with restraint and timing, and it reinforces why I’ve come to trust DS Tayman releases even in cask styles I’d normally approach with caution.
